Spiced Mixed Nut Butter
Elevate your pb banana toast with this crunchy nut butter blended with warm spices
Those who know me well know that I have an addiction to nut butters, always crunchy ones. They really hit the spot and make everything better, from toast to oatmeal, noodles to peanut sauce. To me, eating would be much duller without them. Here is a recipe for a fancy nut butter. Its shockingly easy and just requires patience.
In my butter, I used pecans, cashews, sunflower seeds, and walnuts.
Spiced Nut Butter
Yields ~500mL of nut butter
Ingredients:
300g roasted nuts or seeds (or a mixture): peanuts, almonds, cashews, pecans, walnuts, sunflower seeds etc
1/2 tsp ground cardamom
1/2 tsp freshly ground fennel
1 tsp ground cinnamon
A few cracks of black pepper
1/2 tsp kosher salt
Instructions:
Add all ingredients except for 30g of the nuts to a blender or food processor and blend until smooth and a bit runny, scraping down the sides with a spatula as necessary. This will happen much more quickly with a strong blender. If yours is on the weaker side, be patient.
Roughly chop the remaining 30g of nuts and stir them through the nut butter. Serve or store in a sealed container for up to a month.
